Lets talk fat bombs. Fat bombs are high in fat, low in protein, and low in carbs. They are great to add fat to your diet when you need more or to give you that something sweet to help when you crave sweets without eating real sugar.
When my husband and I first started keto we tried store-bought fat bombs, but quickly learned about what the ingredients really were and realized we were still eating sugar hidden under a different name. So homemade fat bombs became the way to go. I usually make about 3 types of fat bombs every weekend (when I have the most time) to last us the week for our whole family.
Recently, my husband asked for something that was mint and chocolate so I concocted this recipe. I hope you enjoy them.
Mint Chocolate Chip Ice Cream Fat Bombs Ingredients
16 oz mascarpone cheese
3 T powdered monk fruit or powdered Swerve
1/2 t. vanilla extract
2 t. mint extract
1/2 c. Lily's dark chocolate chips - chopped
Optional: couple drops of green food coloring to make the mint green color of ice cream (I didn't in the picture above)
Combine all the ingredients in a mixing bowl.
Beat until combined and fluffy.
Put parchment paper into cookie sheet
Spoon on to parchment paper and place in freezer until hardened.
Makes 32 small servings. You can make them bigger and less servings if you wish.
