Keto Chocolate Chip Almond Muffins - oh so good!

Sometimes you just want a muffin for breakfast or dessert, but wait you are on a keto diet. Have no fear, this muffin fits the bill. It is made with almond butter, but can be made with peanut butter as well. This is a family favorite, so I hope you enjoy it. My husband likes to "frost" his with butter. I prefer to warm the muffin in the microwave and then let butter melt into it.




Keto Chocolate Chip Almond Muffins

Makes 24 Prep time: 20 minutes

Cook time: 25 minutes

Oven temp: 350 degrees F Ingredients:

  • 2 cups almond flour

  • 1 cup Swerve Granulated

  • 2 tsp baking powder

  • 1 pinch salt

  • 2/3 cup almond butter

  • 2/3 cup unsweetened original almond milk

  • 4 large eggs

  • 1 cup sugar-free chocolate chips

Instructions:

  1. Mix the dry ingredients together (except chocolate chips)

  2. Add the peanut butter and almond mil and continue to mix.

  3. Add 1 egg at a time making sure each is completely mixed in before adding the next.

  4. Pour in the chocolate chips and fold in.

  5. Fill muffin paper to between 2/3 and 3/4 full.

  6. Bake for 20 - 30 minute.

  7. Let cool completely.
